Freekeh recipe

This earthy grain makes a great addition to vegetable bowls or salads.

"Cracked young green wheat, this is a delicious whole grain that cooks similarly to rice," says Katzie Guy-Hamilton, chef and director of food and beverage at Equinox. Use it as a part of meal prep or mix-and-match with your favorite vegetables and proteins.

Yields 1 ½ cups


¾ cup freekeh
3 cups water



Rinse freekeh in a colander to prevent a film from forming at the top during cooking. If you still get this film, you can scoop it off with a spoon.

Place freekeh and water in a pot and bring to a boil.

Boil for 20 minutes. Remove from heat and allow to sit for 5 minutes.

You can drain any excess water leftover from cooking.

Save ½ cup for Wednesday's broccolini with gribiche and the remaining 1 cup for Thursday's garden grain bowl.
